Plain Yogurt, Cottage Cheese, Fruit/Berries, Nuts, Maple Syrup and Vanilla
Egg "Mac" Muffin. Fried egg and cheese on an English Muffin. This can be made the night before and wrapped in Parchment paper for a grab and go breakfast.
Mexican Spice Blend (Chatelaine) - Stir 3 tbsp (45 mL) chili powder with 2 tsp (10 mL) each ground cumin, black pepper, dried oregano leaves, 1 tsp (5 mL) each salt, garlic powder, onion powder, paprika and 1/4 tsp (1 mL) cayenne pepper (optional). Great as burger seasoning or as a rub for pork, chicken or steak. Store in a sealed jar or plastic bag. Keeps well at least 2 months. Makes about 1/3 cup (75 mL)
Caesar Dressing – mix well 1 cup of mayonnaise, 2 Tbsp Parmesan Cheese, 1 Tbsp Lemon juice, 1 clove garlic (minced) and just a little milk. The milk is to thin it out and give it the consistency you want, so base amount on preference.
Steak Marinade (from Crazy Plates cookbook) -
1/4 cup soya sauce
3 Tbsp steak sauce
2 Tbsp each lime juice and packed brown sugar
1 Tbsp grated gingerroot
2 cloves garlic, minced
1 tsp sesame oil
1/4 tsp pepper
Snacks
Apple Nachos - slices of apple, shredded cheese, sprinkle of cinnamon. Microwave until cheese melts
Warm Apple Sauce and Cinnamon -- chop apples and boil until very soft. Mash with a fork and sprinkle with cinnamon. A 0 point (Weight Watchers) alternative to apple pie!
Ricotta Peanut Butter Spread - Ricotta Cheese, Peanut Butter (or Almond Butter or Almond Pulp) and Maple Syrup. Serve with toast or use as dip for fruit.
